AVI Recipes
Beet and Goat Cheese Salad
- 2oz Red Beet Slices (about 3)
- 2oz Golden Beet Slices (about 3)
- 1oz Goat Cheese
- 2oz Arugula
- 1oz Almonds Salted & Toasted
- 1oz Extra Virgin Olive Oil
- 1oz Balsamic Vinegar
Roast Beets in a 350o oven with skins on until tender approx 1 hour. Cool and cut into ¼ inch disks.
Alternately stack the colors of beets 6 slices high. Form Goat Cheese into ¼ “disk the same size as the beets. Place on top of the beet tower to finish. Arrange arugula and almonds on a plate with the beet tower. Drizzle with Balsamic Vinegar and Olive Oil.
Makes one salad.
UMU Balsamic Vinaigrette
- 1 cup Balsamic Vinegar
- 1 cup Olive Oil
- 12 oz Vegetable Oil
- 1/3 cup+2tsp Dijon Mustard
- 1/3 cup+2tsp Chopped Onion
- 3 Tbsp Minced Red Bell Pepper
- 3 Tbsp Minced Green Bell Pepper
- ¾ Tbsp Kosher Salt
- ¾ Tbsp Black Pepper
- 2 Tbsp Sugar
Combine all ingredients and mix well using a food processor or blender, Season with salt and pepper to taste. Store in an airtight container for up to 5 days. Makes 3 cups.
AVI House Made Granola Bars
Makes 24 Servings
INGREDIENTS:
- 2 cups Rolled Oats
- ¾ cup Packed Brown Sugar
- ½ cup Wheat Germ
- ¾ teaspoon Ground Cinnamon
- 1 cup All Purpose Flour
- ¾ cup Raisins (optional)
- ¾ teaspoon Salt
- ½ cup Honey
- 1 Egg, Beaten
- ½ cup Vegetable Oil
- 2 teaspoons Vanilla Extract
DIRECTIONS:
- Preheat oven to 350o Grease a 9x13 baking pan
- In a large bowl, mix together oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center of the dry ingredients and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture into prepared pan.
- Bake for 30 to 35 minutes in the oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, cut bars while still warm. Do not allow bars to cool before cutting or they will be too hard to cut.
**Do not overcook! Remove from oven when edges appear brown and middle appears uncooked.
*Customize by adding dried cranberries, chocolate chips, slivered almonds, walnuts, M&Ms etc
